Pumpkin is used in many recipes that are part of the Italian culinary tradition: we love pumpkin in the family and we prepare a lot of dishes with it.

Today we have prepared a pumpkin velvet.

After many attempts with different types of pumpkin, in our house we think that the pumpkin velvety made with pumpkin" delica or mantuan " is the best: a unique flavor and an enveloping scent.

1000 GR. pumpkin. We use the delicate pumpkin or mantuan of the Lorenzini farm(you'll find a number stamped on the pumpkin: go to the company's website and you can track the product from the moment of sowing). This quality is the best for us to make pumpkin velvet.

200 GR. of potatoes

1/2 Onion

500 ml of vegetable broth



parsley or chives: the taste.

Preparation: 10 minutes

Cooking cooking: 40 minutes

How to make pumpkin velvety.

Remove the peel and seeds.

Cut the pumpkin pulp into small pieces, peel the potatoes and cut into small pieces


Let the icing-cut onion wither in a pot with a drizzle of oil.

Add the pieces of pumpkin pulp and potatoes and let flavor.

Add the vegetable broth until the vegetables are covered, adjusted salt,

Cover and cook for 30 minutes

Prepare gluten-free croutons, if you like and make them brown in the oven with a drizzle of extra virgin olive oil on top for a few minutes.

Serve the pumpkin velvety by dusting with chopped parsley or chives: we used chives this time.
